This Looks Sorta Good...No?

Need an alternative to eating rice?? Or perhaps you just need more spice in your life?? Yup! This is the recipe for YOU! Dance in your kitchen along with me as we make this recipe together!

Ingredients:
  • 1-2 Large Jicama Roots (Peeled)
  • 5-6 Sweet Juice Oranges (Using Orange Juice Makes This Sweeter...or Even Pineapple!)
  • 1 Bunch of Cilantro
  • Half Red or Green Bell Pepper
  • Quarter One Red Onion
  • Pinch of Raw Cayenne Pepper
  • Juice of 2 Lemons
  • Lacinato Kale
  • Bit of Green Onion or Garlic Chives

Directions:
  • Thinly slice the kale or shred and place into bowl.
  • Separately, peel the jicama as shown in the video.
  • Chop the jicama into chunks that will fit into your food processor.
  • Use the shredding blade of your food processor to create the jicama wild rice. Put the chunks through the processor and watch magic happen!
  • After you make your "rice," place the rice on top of the bed of ribboned kale.
  • Then, clean out your food processor so that you can use it again for the orange spice. Place all other ingredients in the processor and blend until it reaches a gazpacho consistency.
  • Pour the orange spice dressing over your rice and bed of kale.
  • Sprinkle with lemon, cayenne pepper, and basil.
  • Enjoy in the sunshine and dance the day away!
