Pea-nutty Oatmeal Squares

I have been wanting to make these for a while.  They look pretty good, and healthy too.  Check out the Physician's Preference Blog for some more healthy snack recipes.  They always have things that look so yummy on there!


Peanutty Oatmeal Bars


Besides being loaded with healthy fats and fiber, these bite-sized oatmeal squares pack a delicious taste, too!  From a breakfast treat to a mid-day snack, peanutty oatmeal bars are sure to satisfy!
  • 1 ½ cups rolled oats
  • ¼ cup Sweet-N-Natural
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk (original or vanilla flavor)
  • 1 large egg, lightly beaten
  • 1 large mashed banana
  • 1/4 cup creamy natural peanut butter
  1. Mix together the rolled oats, Sweet-N-Natural, baking powder, kosher salt and ground cinnamon.
  2. Add in the vanilla extract, almond milk and egg. Mix the ingredients together.
  3. Then add in the mashed banana and peanut butter. Combine all of the ingredients.
  4. Pour the mixture into a lightly greased 8 by 8 inch baking pan. Bake at 350 degrees for 20 minutes.
  5. Cut into squares and enjoy!
